If you’ve driven by Bo Urban Corner in Folsom and wondered if they serve bourbon, you’re not alone. Also, the answer is no. At first glance, their sign may give you that impression, but when you walk inside, you’ll find a family-owned Vietnamese eatery that’s warm and welcoming with a modest yet satisfying made-to-order menu. The staff is extremely helpful and happy to answer questions or give guidance on what to order. Everything is done in a build-it-yourself style, making it a perfect pick for particular palates. First, choose your protein (whether it’s chicken, beef, salmon, pork, shrimp, or tofu); next, choose what to do with that protein—a noodle bowl, fresh rolls, or a bánh mì (sandwich)—and then patiently wait for your mouthwatering meal to be placed in front of you. Speaking of scrumptious, their homemade peanut sauce is served warm and probably the best I’ve had. I slathered it on my Fresh Rolls, which were stuffed with vermicelli, cilantro, lettuce, and shrimp, before being tightly wrapped in rice paper. They came in an order of six, so you can share—or not. I also enjoyed a Noodle Bowl made up of vermicelli, pork, lettuce, cucumbers, carrots, and peanuts with a fried egg roll. On top? More peanut sauce, some fish oil, and hoisin sauce. Did I mention the peanut sauce? Yum!
