Fiori Italian Pizzeria (fiorifolsom.com) opened at 614 Sutter Street, Suite C, in the Folsom Historic District. Helmed by the same partners as Roseville’s Rose Park Bistro, expect 12-inch, Neapolitan-style, wood-fired pizzas, homemade pasta entrées, bone-in ribeye, Sicilian-style salmon, handcrafted cocktails, a wide selection of wine and whiskey, and more.

Placerville Sauna (placervillesauna.com), located at 6401 Mother Lode Drive in Placerville, is a unique wellness sanctuary featuring an 18-person traditional sauna, a spacious cold plunge pool, and an infrared sauna. Their signature one-hour guided contrast therapy classes feature the sauna ritual aufguss (a multi-sensory experience combining essential oils, steam, and music, followed by an invigorating cold plunge); in addition, they host drop-in "social sits" and offer private event bookings. 

The Westfield Galleria at Roseville is welcoming a handful of new tenants this year, including Pop Mart (popmart.com), a market-leading character-based entertainment company and global champion of designer toy culture; Nespresso (nespresso.com), whose boutiques offer product and coffee pick-up, used capsule drop-off, machine purchase, coffee tastings, masterclasses, and more; and Crocs (crocs.com), a world leader in innovative casual footwear for women, men, and children.

ELDO Chophouse (eldochophouse.com), sited at 3909 Park Drive in El Dorado Hills, was opened by two friends with a simple idea: create a restaurant they would want to go to with a menu featuring their favorite dishes. Look forward to fine wagyu steaks, a burger with onion jam on brioche, pan-seared halibut, and Parker House rolls (with truffle honey butter and shaved black truffles)—all made using high-quality ingredients—plus craft cocktails and fine wines at approachable prices. 

The Pantry (thepantryroseville.com)—a family-owned restaurant at 1410 East Roseville Parkway, Suite 140, in Roseville—brings a vibrant, innovative twist to breakfast, brunch, and lunch with a globally inspired menu crafted from fresh, locally sourced ingredients. Guests can expect a warm, inviting atmosphere, exceptional service, and unique flavors that celebrate creativity and quality. 

Local restaurant chain Dos Coyotes Border Café (doscoyotes.com), known for their bold, flavorful Southwestern-style cuisine in lively environs, is bringing its 12th location to 2776 East Bidwell Street in Folsom’s Broadstone Marketplace. Set to open this spring, expect quesadillas, salads, and burritos (topped or filled with flame-broiled meats and veggies and seasonal ingredients), alongside a full bar, house-made salsas and tortilla chips, and seafood options (including fried fish tacos).

Rise & Redemption (riseandredemption.com), a woman-owned, family-operated boutique featuring stylish apparel and accessories for women and men, is opening at 685 Placerville Drive in Placerville. The business, whose mission is to “help you feel confident and comfortable every day with style that fits, support that’s real, and a community that cares,” has an existing location in Vacaville.

Stop by The Nail Vibe (thenailvibe.com) at 10842 Bear Hollow Drive, Suite 103, in Rancho Cordova—a luxurious salon where relaxation meets creativity—for stunning nail art, spa manicures and pedicures, or waxing services; all treatments come inclusive of a complimentary beverage (wine, bubbly, Vietnamese coffee, bottled water, or tea).

Nourish at the Meadow (nourishatthemeadow.com), a cozy café at 7502 Green Valley Road in Placerville, serves a variety of refreshing cold-pressed juices, real-fruit smoothies, teas, coffee, baked goods, soups, salads, paninis, and more. As part of The Meadow (connectatthemeadow.com), you can also explore the peaceful garden center, relax by the waterfall, enjoy the labyrinth, or take part in community classes such as yoga, Pilates, meditation, and a variety of workshops.
